Kale Omelet

Eggs are great brain food, especially when they have kale mixed in. If your kids aren’t too fond of kale, baby spinach is much gentler on the taste buds.

Serves 1

2 eggs, beaten

1 cup kale, chopped

1 tablespoon parsley, minced

1/8 teaspoon garlic powder

Fillings of your choice (cheese, ham, bacon, tomatoes, olives, etc.)

Heat a frying pan over medium high heat and add a dash of olive oil.

In a bowl, beat the eggs, kale, parsley and garlic powder until well integrated. Pour into the hot pan and cook until the edges are done.

Flip the omelet and cook for another minute before adding the chosen fillings and folding over. Heat through and serve.

Super Brainy Oatmeal

This is no ordinary oatmeal! It’s a delicious, belly-warming way to start your morning, but the additions make it extra good for school days, too.

Serves 2

1 cup rolled oats

2 cups water

1 tablespoon flax seeds

1/2 teaspoon cinnamon

1/4 cup walnuts, chopped

1 apple, chopped

1/4 cup raisins

pinch salt

Bring the water, salt and flax to a boil. Add the remaining ingredients and cook for 7-10 minutes or until the oats are tender. Serve with sugar and milk, if desired.

Blueberry Oat Muffins

These yummy muffins can be made ahead and frozen if you want to have easy breakfasts on hand. Just thaw in the microwave or toaster oven to eat.

Makes 12 muffins

1-1/4 cups all-purpose flour

1 cup quick oats

1/2 cup brown sugar

2 teaspoons baking powder

1/2 teaspoon salt

1/2 teaspoon cinnamon

1/4 teaspoon ground nutmeg

1 egg, lightly beaten

1 cup plain yogurt

1/4 cup butter or margarine, melted

1 cup fresh blueberries

Preheat the oven to 400º. Line muffin tins with paper liners.

In a bowl, mix the sugar, flour, baking powder, salt, and spices. In another, beat the egg, yogurt and margarine together. Add the dry ingredients to the wet and mix until just combined. Stir in the blueberries and spoon the mixture into the muffin tin.

Bake for 20 minutes, or until the muffins are golden brown.
