Healthy Quesadillas

This easy, hand-held food allows you to pack a healthy lunch for your child without spending hours on it.

Serves 1

2 whole wheat tortillas

1/4 cup mozzarella cheese, grated

1/2 cup spinach

1/4 cup black beans, mashed

Spread one tortilla with black beans and top with spinach. Add the cheese and top with the other tortilla. Place in a frying pan and heat for 2 minutes over medium heat or until the cheese begins to melt. Flip and cook another 2 minutes . Cut into quarters and serve with salsa.

Brainy Pasta Salad

Pasta is always a hit with kids, but this salad, while ideal for a lunchbox, is packed with extra nutrition.

Serves 4

4 cups spiral pasta, cooked

1 cup cherry tomatoes, cut in half

1 red pepper, chopped

1 cup spinach, shopped

2 stalks celery, chopped

1 large avocado

1 tablespoon cilantro

1 tablespoon parsley

1 teaspoon Dijon mustard

1 tablespoon lemon juice

1 tablespoon olive oil

salt and pepper

In the food processor, blend the oil, lemon juice, mustard, parsley, cilantro and avocado. Pour over the pasta and vegetables and toss until evenly covered. Season to taste.

Salmon Steaks

Tasty teriyaki sauce makes these steaks extra yummy and they work well cold, too.

Serves 4

4 salmon steaks

¼ cup sesame oil

¼ cup lime juice

¼ cup soy sauce

2 tablespoons Brown sugar

1 tablespoon sesame sedes

1 teaspoon mustard powder

1 teaspoon ginger powder

¼ teaspoon garlic powder

Mix all ingredients except the salmon in a small pot. Heat, stirring, until the sugar is completely dissolved. Set aside half a cup.

Pour the rest of the marinade over the salmon and turn. Marinate for 2-4 hours and drain.

Preheat the oven to 350º and bake the salmon for 5 minutes. Turn and baste with the remaining marinade. Broil until done, about five minutes. Brush with more marinade before serving.
